Key Lime Pie Mini Parfaits

Key Lime Pie Mini Parfaits. Enjoy a taste of the tropics! These parfaits feature sweetened, velvety mascarpone cheese laced with the juice and zest of fresh Key limes.

Key Lime Pie Mini Parfaits

Yield: 8 servings

Ingredients

  • 1 (8 ounce) container Crave Brothers Farmstead Classics Mascarpone cheese
  • 1/2 cup sweetened condensed milk
  • 1/3 cup lime juice*
  • 1 1/2 teaspoons lime zest*
  • 1 drop green food color (optional)
  • 3/4 cup Graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 2 tablespoons butter, melted
  • Sweetened whipped cream
  • Lime wedges

Instructions

  1. Beat the mascarpone, sweetened condensed milk and lime juice in a medium bowl until smooth. Transfer half of the mascarpone mixture to a pastry bag; set aside.
  2. Beat lime zest and green food coloring, if desired, into remaining cheese mixture until blended. Spoon into another pastry bag.
  3. Combine Graham cracker crumbs and sugar in a small bowl; stir in butter. Sprinkle 1 teaspoon crumb mixture into each 3-ounce glass. Layer each with 1 tablespoon white mascarpone mixture and 1 tablespoon green mascarpone mixture.
  4. Repeat layers, starting with the crumb mixture.
  5. Top with whipped cream.
  6. Sprinkle with remaining crumb mixture.
  7. Garnish with lime wedges.
  8. Refrigerate until serving

Notes

* Fresh limes can be substituted for Key limes in the recipe. Four medium limes juiced yields about 1/3 cup lime juice.
