Key Lime Pie Mini Parfaits
Key Lime Pie Mini Parfaits. Enjoy a taste of the tropics! These parfaits feature sweetened, velvety mascarpone cheese laced with the juice and zest of fresh Key limes.
Yield: 8 servings
Ingredients
- 1 (8 ounce) container Crave Brothers Farmstead Classics Mascarpone cheese
- 1/2 cup sweetened condensed milk
- 1/3 cup lime juice*
- 1 1/2 teaspoons lime zest*
- 1 drop green food color (optional)
- 3/4 cup Graham cracker crumbs
- 2 tablespoons granulated sugar
- 2 tablespoons butter, melted
- Sweetened whipped cream
- Lime wedges
Instructions
- Beat the mascarpone, sweetened condensed milk and lime juice in a medium bowl until smooth. Transfer half of the mascarpone mixture to a pastry bag; set aside.
- Beat lime zest and green food coloring, if desired, into remaining cheese mixture until blended. Spoon into another pastry bag.
- Combine Graham cracker crumbs and sugar in a small bowl; stir in butter. Sprinkle 1 teaspoon crumb mixture into each 3-ounce glass. Layer each with 1 tablespoon white mascarpone mixture and 1 tablespoon green mascarpone mixture.
- Repeat layers, starting with the crumb mixture.
- Top with whipped cream.
- Sprinkle with remaining crumb mixture.
- Garnish with lime wedges.
- Refrigerate until serving
Notes
* Fresh limes can be substituted for Key limes in the recipe. Four medium limes juiced yields about 1/3 cup lime juice.
