Steamed Date Pudding


  • 1 cup fresh dates, cut up
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup ground raw carrots
  • 1 cup ground raw potatoes
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup chopped toasted walnuts


  1. Mix together and put into a greased 2-quart mold. Cover with a closely-fitted lid. Put in boiling water halfway up the sides of the mold. Steam for 3 hours.
  2. Remove and let stand 5 or 10 minutes.
  3. Invert onto a serving plate.
  4. Serve with warm lemon sauce.
