Stirred Custard

  • 3 large eggs, well beaten
  • 3/4 cup granulated sugar
  • 1 quart milk
  • 1 tablespoon vanilla extract
  • Dash of ground nutmeg


  1. Combine eggs and sugar in a large saucepan; gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and coats a metal spoon (about 20 minutes).
  2. Cool custard slightly.
  3. Stir in vanilla extract and nutmeg; cover and chill. (This mixture is pouring consistency.)

Makes 5 cups.
