Burnt Honey Sauce


  • 1 cup granulated sugar
  • 1/2 cup clear honey


  1. In a heavy-base saucepan, dissolve sugar in 4 tablespoons water. Bring to a boil and boil for 5 minutes or until it becomes a deep brown caramel.
  2. Off the heat stir in another 4 tablespoons of water, taking care as the mixture will splatter. Cook for another 1 to 2 minutes until the temperature reaches 240 degrees F.
  3. Stir in the honey and remove from the heat.
  4. Let cool.

Serves 6 to 8.
