Fruit Purees

Blackberry Puree

  • 1 pint blackberries
  • 1 tablespoon granulated sugar

Raspberry Puree

  • 1 1/2 pints raspberries
  • 2 teaspoons granulated sugar

Strawberry Puree

  • 1 pint strawberries
  • 1 tablespoon granulated sugar
  1. Blackberry Puree: Wash blackberries and drain well in a colander. Pick off stems.
  2. Puree in a food processor or blender with the sugar until the mixture is as smooth as possible.
  3. Strain, discarding solids.
  4. Pour into a plastic squirt bottle and chill.
  5. Raspberry Puree: Puree raspberries and sugar in a food processor or blender until completely smooth.
  6. Strain, discarding solids.
  7. Pour into a plastic squirt bottle and chill.
  8. Strawberry Puree: Wash strawberries, then core out stems to ensure that the woody core is removed, Use a paring knife and cut a cone out of the top of the berry.
  9. Puree strawberries and sugar in a food processor until completely smooth.
  10. Strain, discarding solids.
  11. Pour into a plastic squirt bottle and chill.
