Jamaican Easter Bun

Ingredients

  • 1/4 cup butter
  • 1 cup granulated sugar
  • 1 bottle "Dragon" Stout
  • 1/4 cup orange marmalade
  • 1/4 cup honey (optional)
  • 2 eggs
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 tablespoon brown coloring
  • 1 cup mixed fruits (raisins, cherries, mixed peel)
  • 3 teaspoons vanilla extract

Instructions

  1. Melt butter, sugar and stout together. Add marmalade and honey; mix well and allow to cool.
  2. Add slightly beaten eggs, brown coloring (optional) and vanilla extract. Add mixed fruits; mix well.
  3. Sift flour, baking powder (all dry ingredients) together. Add dry mixture to liquid mixture. Pour well mixed batter into greased loaf pan.
  4. Bake at 325 degrees F for 15 minutes; reduce heat to 300 degrees F. Continue baking for approximately 1 hour.
  5. Remove from oven and allow to cool.
  6. Serve sliced with cheese.
