Jamaican Easter Bun
Ingredients
- 1/4 cup butter
- 1 cup granulated sugar
- 1 bottle "Dragon" Stout
- 1/4 cup orange marmalade
- 1/4 cup honey (optional)
- 2 eggs
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1 tablespoon brown coloring
- 1 cup mixed fruits (raisins, cherries, mixed peel)
- 3 teaspoons vanilla extract
Instructions
- Melt butter, sugar and stout together. Add marmalade and honey; mix well and allow to cool.
- Add slightly beaten eggs, brown coloring (optional) and vanilla extract. Add mixed fruits; mix well.
- Sift flour, baking powder (all dry ingredients) together. Add dry mixture to liquid mixture. Pour well mixed batter into greased loaf pan.
- Bake at 325 degrees F for 15 minutes; reduce heat to 300 degrees F. Continue baking for approximately 1 hour.
- Remove from oven and allow to cool.
- Serve sliced with cheese.
