Crustless Spinach Quiche
Yield: 4 to 6 servings
Ingredients
- 1 (10 ounce) package frozen chopped spinach, thawed and drained well
- 1 cup cottage cheese
- 1/4 pound Cheddar cheese, shredded
- 1 small onion, sliced
- 1 tablespoon oil
- 1/4 teaspoon garlic powder
- Pinch cayenne pepper
- 4 eggs
- 1/3 cup milk
- 1/2 teaspoon dried basil
Instructions
- Heat oven to 325 degrees F.
- In blender of food processor, blend cheeses, onions, oil, seasonings, eggs and milk until smooth. Pour into bowl with spinach and blend well.
- Grease a 9 inch pie plate. Pour in mixture.
- Bake for 35 to 45 minutes or until knife inserted in center comes out clean.
- Let stand for 10 minutes before cutting.
