Fresh Pineapple and Cheese Casserole

Ingredients

  • 1 to 2 cups fresh chunk pineapple (or canned)
  • 1 cup sharp shredded Cheddar cheese
  • 1/2 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 3/4 cup crushed Ritz crackers
  • 1/2 cup butter

Instructions

  1. Heat oven to 350 degrees F and grease a 1 1/2 to 2 quart baking pan or dish.
  2. In a mixing bowl, mix sugar and flour together.
  3. Stir pineapple chunks into flour and sugar mixture.
  4. Place in greased baking dish.
  5. Sprinkle evenly with cheese.
  6. Add cracker crumbs and spread evenly.
  7. Drizzle melted butter over casserole.
  8. Bake at 350 degrees for 35 minutes until topping is browned and the edges are bubbling slightly.
  9. Remove and cool until set (10 to 20 minutes).
  10. Serve hot or at room temperature. Delicious!
