Sweet Capellini Resurrection Day Pie
- 1/2 pound capellini or fine noodles
- 1 teaspoon Crisco
- 1 1/2 cups granulated sugar
- 1 pound Ricotta
- 1 teaspoon vanilla or lemon extract
- 8 eggs, beaten
- Grease well an 8-inch square pan.
- Boil and drain noodles well. While still warm, add sugar and Crisco. Cool.
- Add Ricotta, extract and eggs.
- Bake at 350 degrees F for about 1 hour.
