Sweet Capellini Easter Pie



  • 1/2 pound capellini or fine noodles
  • 1 teaspoon Crisco
  • 1 1/2 cups granulated sugar
  • 1 pound Ricotta
  • 1 teaspoon vanilla or lemon extract
  • 8 eggs, beaten


  1. Grease well an 8-inch square pan.
  2. Boil and drain noodles well. While still warm, add sugar and Crisco. Cool.
  3. Add Ricotta, extract and eggs.
  4. Bake at 350 degrees F about 1 hour.
