Pineapple-Mint Relish



  • 1/2 large pineapple, peeled, cored, cut into 1/4-inch pieces (about 3 cups)
  • 1/2 cup finely chopped green bell pepper
  • 1/2 cup finely chopped red onion
  • 1/4 cup chopped fresh mint
  • 2 teaspoons grated lemon peel


  1. Stir all ingredients in large bowl to blend.
  2. Season to taste with salt and pepper.
  3. Can be made 1 day ahead. Cover; chill.

Yield: 4 cups
