- 1/2 large pineapple, peeled, cored, cut into 1/4-inch pieces (about 3 cups)
- 1/2 cup finely chopped green bell pepper
- 1/2 cup finely chopped red onion
- 1/4 cup chopped fresh mint
- 2 teaspoons grated lemon peel
- Stir all ingredients in large bowl to blend.
- Season to taste with salt and pepper.
- Can be made 1 day ahead. Cover; chill.
Yield: 4 cups
