Creamed Yellow Crookneck Squash

Ingredients

  • 2 pounds yellow crookneck squash
  • 1 medium onion, chopped
  • About 1 cup water
  • 1/2 stick butter
  • Salt and pepper
  • 1/2 to 3/4 cup milk

Instructions

  1. Do not peel the squash. Slice them into 1/4 inch slices.
  2. Add sliced squash to a large skillet along with onion, water, butter, salt and pepper. Cook until squash and onion are tender and the water used to steam the vegetables has cooked away.
  3. Add milk and cook down until it looks "curdled."
