Deli Chicken

Instead of buying deli chicken at the grocery store, try this Deli Chicken. It's far superior! You can double the spices if you like it heavily coated!

Deli Chicken


  • 1 roasting chicken
  • 1 teaspoon kosher or sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon granulated sugar
  • 2 teaspoons paprika
  • Extra-virgin olive oil


  1. Remove the giblets from chicken and set aside for another use.
  2. Wash chicken inside and out, drying with paper towels.
  3. Rub chicken with a little olive oil.
  4. Tuck wing tips under.
  5. Mix all the spices together well. Rub all over chicken.
  6. Place on plate and wrap with plastic wrap.
  7. Put in refrigerator for a least four hours and up to 24 hours.
  8. Put chicken into a small Nesco roaster and cook at about 325 degrees F.
  9. Chicken is done at 160 degrees F (about 1 1/2 to 2 hours) and no longer pink.
