Frosted Molasses Creams

I got this recipe from a fellow juror when I served on the 40th Maricopa County, Arizona, Grand Jury back in the 80's. This is a wonderful recipe!

Ingredients

Bars

  • 1/2 cup shortening
  • 1/2 cup granulated sugar
  • 1 egg, beaten
  • 1/2 cup molasses
  • 1/3 cup hot coffee
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves

Frosting

  • 1/4 cup butter, creamed
  • 2 cups confectioners' sugar
  • 2 tablespoons coffee

Instructions

  1. Bars: Heat oven to 350 degrees F.
  2. Cream shortening and sugar. Blend in eggs, molasses and coffee. Add remaining ingredients and blend well. Pour into a greased and floured 13 x 9-inch pan.
  3. Bake at 350 degrees F for about 20-25 minutes. Check for doneness.
  4. Frost while warm.
  5. Frosting: Mix until smooth.
