Hash Brown Potato Casserole

Ingredients

Casserole

  • 1 (2 pound) package frozen hash brown potatoes, thawed
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 2 cups shredded Cheddar cheese
  • 1 (8 ounce) container sour cream
  • 1/2 cup melted butter
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Topping

  • 1 cup crushed cornflakes (or Ritz crackers)
  • 1/2 cup melted butter

Instructions

  1. Heat the oven to 350 degrees F (175 degrees C).
  2. Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9 x 13 inch baking dish. Sprinkle crushed cornflakes or Ritz crackers on top. Drizzle butter over the top.
  3. Bake until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.
