Margaret's Sugar Gumdrop Cookies
Ingredients
- 1 cup shortening
- 1 cup granulated sugar
- 1 cup brown sugar (packed)
- 2 eggs, beaten
- 2 cups cake flour*
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup gumdrops, chopped (omit black gumdrops)
- 1 cup coconut**
Instructions
- Heat oven to 375 degrees F.
- Cream shortening, sugars and eggs.
- Mix baking soda, baking powder and salt and stir well into the creamed mixture.
- Mix in gumdrops and coconut (if using).
- Drop by small balls onto a cookie sheet.
- Bake until done.
Notes
* I recall Mom using regular all-purpose flour.
** Coconut may be omitted, if desired.
