Margaret's Sugar Gumdrop Cookies

Margaret's Sugar Gumdrop Cookies recipe

Ingredients

  • 1 cup shortening
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 eggs, beaten
  • 2 cups cake flour*
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup gumdrops, chopped (omit black gumdrops)
  • 1 cup coconut**

Instructions

  1. Heat oven to 375 degrees F.
  2. Cream shortening, sugars and eggs.
  3. Mix baking soda, baking powder and salt and stir well into the creamed mixture.
  4. Mix in gumdrops and coconut (if using).
  5. Drop by small balls onto a cookie sheet.
  6. Bake until done.

Notes

* I recall Mom using regular all-purpose flour.

** Coconut may be omitted, if desired.
