Pineapple Sunshine Cake
Pineapple Sunshine Cake is a cool, refreshing cake for the warmer months.
Ingredients
Cake
- 1 box yellow cake mix
- 4 eggs
- 1/2 cup vegetable oil
- 1 (8 ounce) can crushed pineapple with juice
Icing
- 1 (8 ounce) container whipped topping, thawed
- 1 small box instant vanilla pudding
- 1 (8 ounce) can crushed pineapple with juice
Instructions
- Heat oven to 350 degrees F. Spray a 9 x 13 inch baking dish with cooking spray.
Cake
- In a large bowl, combine cake mix, eggs, oil and crushed pineapple with juice. Mix well.
- Pour into prepared baking pan, and bake for 25 to 30 minutes or until a wooden pick inserted in center of cakes comes out clean.
- Allow to cool completely on a wire rack.
Icing
- In a medium size bowl, fold together whipped topping, vanilla pudding and 1 can crushed pineapple with the juice.
- Spread over the top of cooled cake.
- Store in the refrigerator.
