Pineapple Sunshine Cake

Pineapple Sunshine Cake is a cool, refreshing cake for the warmer months.

Ingredients

Cake

• 1 box yellow cake mix
• 4 eggs
• 1/2 cup vegetable oil
• 1 (8 ounce) can crushed pineapple with juice

Icing

• 1 (8 ounce) container whipped topping, thawed
• 1 small box instant vanilla pudding
• 1 (8 ounce) can crushed pineapple with juice

Instructions

1. Heat oven to 350 degrees F. Spray a 9 x 13 inch baking dish with cooking spray.

Cake

1. In a large bowl, combine cake mix, eggs, oil and crushed pineapple with juice. Mix well.
2. Pour into prepared baking pan, and bake for 25 to 30 minutes or until a wooden pick inserted in center of cakes comes out clean.
3. Allow to cool completely on a wire rack.

Icing

1. In a medium size bowl, fold together whipped topping, vanilla pudding and 1 can crushed pineapple with the juice.
2. Spread over the top of cooled cake.
3. Store in the refrigerator.
