Pineapple Sunshine Cake

Pineapple Sunshine Cake is a cool, refreshing cake for the warmer months.



  • 1 box yellow cake mix
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1 (8 ounce) can crushed pineapple with juice


  • 1 (8 ounce) container whipped topping, thawed
  • 1 small box instant vanilla pudding
  • 1 (8 ounce) can crushed pineapple with juice

  1. Heat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.
  2. In a large bowl, combine cake mix, eggs, oil and crushed pineapple with juice. Mix well.
  3. Pour into prepared baking pan, and bake for 25-30 minutes or until a wooden pick inserted in center of cakes comes out clean.
  4. Allow to cool completely on a wire rack.
  5. In a medium-size bowl, fold together whipped topping, vanilla pudding and 1 can crushed pineapple with the juice.
  6. Spread over the top of cooled cake.
  7. Store in the refrigerator.
