Strawberry Cake

This cake was a keeper when I found it, and I'm still making it years later.

Ingredients

Cake

  • 1 (18.25 ounce) box white cake mix*
  • 1/4 cup all-purpose flour
  • 1 small box strawberry Jell-O
  • 1/2 cup water
  • 1/2 box frozen strawberries
  • 2/3 cup vegetable oil
  • 4 eggs

Frosting

  • 1 box confectioners' sugar
  • 1/4 pound butter
  • Remaining 1/2 box frozen strawberries

Instructions

Cake

  1. Heat oven to 350 degrees F. Grease and flour** a 9 x 13 inch cake pan.
  2. Combine cake ingredients and beat for 4 minutes.
  3. Pour into the prepared pan and bake for 45 minutes.

Frosting

  1. Mix all ingredients. Spread over cooled cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
