Browned Butter Fish


  • 1 (2 pound) fish filet
  • 1/2 cup butter
  • Lemon juice
  • Marjoram
  • Salt, to taste
  • Paprika, to taste
  • Pepper, to taste


  1. Heat oven to 450 degrees F. Put butter in shallow baking dish in hot oven until butter is melted and browned.
  2. Reduce oven temperature to 400 degrees F. Place filets in hot butter and bake 10 to 15 minutes.
  3. Turn and baste with pan juices. Sprinkle fish with lemon juice, marjoram, salt, paprika and pepper. Bake about 5 more minutes.
  4. Serve with pan juices.
