Baked Salmon Squares with Parsley Cream Sauce
Ingredients
Salmon
- 3 tablespoons butter, melted
- 2 cups milk
- 3 large eggs, beaten
- 1 can red salmon
- 2 cups soft bread crumbs
- 1 tablespoon finely chopped onion
- 2 tablespoons lemon juice
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
Parsley Cream Sauce
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups milk
- Salt and pepper
- Parsley
Instructions
Salmon
- In a bowl, combine melted butter, milk and well beaten eggs.
- Flake and clean salmon. Place in an 8 inch square, greased pan.
- Pour egg mixture over salmon and blend well.
- Add crumbs (broken up bread pieces), onion, lemon juice, salt and pepper.
- Bake at 375 degrees F for 40 minutes.
- Serve with Parsley Cream Sauce.
Parsley Cream Sauce
- Melt butter and add flour. Add milk, salt, pepper and parsley. Cook until thick and creamy.
