Salmon Cakes with Avocado Cream Sauce

Avocado salmon cakes with a delightful avocado cream sauce created by using 2 leftover Oven Roasted Salmon fillets.

Salmon Cakes

Prep: 30 min | Cook: 10 min | Yield: 4 salmon cakes, one cake per serving

Ingredients

  • 1 ripe fresh Hass avocado*, halved, pitted, peeled and chopped
  • 2 cooked salmon fillets from Oven Roasted Salmon with Avocado Citrus Salsa
  • 1 (14 ounce) can sliced new potatoes, drained
  • 1/3 cup finely chopped red bell pepper
  • 3 tablespoons chopped scallions, divided
  • 1 egg, lightly beaten
  • 1 teaspoon Old Bay® seasoning
  • 2 tablespoons vegetable oil
  • 2 tablespoons chopped cilantro
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Put salmon fillets in a medium bowl; mash with a fork, break into small flakes.
  2. Finely chop potatoes; add to bowl.
  3. Add bell pepper, 2 tablespoons of the scallions, egg and Old Bay seasoning; stir until mixture comes together.
  4. Form mixture into 4 patties.
  5. In a large nonstick skillet, heat oil over medium heat.
  6. Fry cakes, gently turning once, until crispy and cooked through.
  7. In a food processor, puree avocado, cilantro, lime juice, remaining scallion, salt and pepper until smooth.
  8. Serve salmon cakes with Avocado Cream Sauce and prepared salad.

Notes

* Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
