Shrimp Mornay

Shrimp Mornay

Yield: 4 servings

Ingredients

  • 1/2 pound mushrooms, sliced
  • 2 green onions, sliced
  • 2 tablespoons butter
  • 1 pound raw medium shrimp, shelled and deveined
  • 3 tablespoons dry white wine
  • 1 (8 ounce) package cream cheese, cubed
  • 1/3 to 1/2 cup milk
  • 1/2 cup (2 ounces) shredded Swiss cheese

Instructions

  1. Saute mushrooms and onions in butter.
  2. Add shrimp and wine; cook for 2 to 3 minutes or until shrimp are pink.
  3. Remove vegetables and shrimp from pan with slotted spoon.
  4. Add cream cheese and milk to pan.
  5. Stir over low heat with wire whisk until smooth.
  6. Add Swiss cheese; stir until cheese is melted.
  7. Return shrimp and vegetables to pan; mix lightly.
  8. Serve with rice or pasta.
