Chipotle Rubbed Beef Ribs

Chipotle Rubbed Beef Rub

Ingredients

  • 5 pounds beef back ribs
  • 4 cups beef stock
  • 1 medium onion, sliced thin
  • 1 bottle dark beer
  • 1 tablespoons garlic, minced
  • 1 teaspoon thyme
  • 1/2 teaspoon Chipotle powder
  • 3 teaspoons salt
  • 1/2 cup molasses
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons Tabasco sauce

Instructions

  1. In a 5 quart Dutch oven combine beef broth, onions, beer, garlic and 1 teaspoon salt.
  2. Rub the ribs with thyme and chipotle powder.
  3. Add to Dutch oven and bring to a simmer. Cover. Set the Dutch oven in a 350 degrees F oven for about 1 1/2 hours.
  4. Remove from oven and cool ribs in liquid. Remove ribs and reduce liquid to about a cup and reserve.
  5. Mix together the reduced broth from ribs, molasses, balsamic vinegar, Tabasco and remaining salt.
  6. Use as a sauce for ribs.
