Fresh Apple Cake with Penuche Frosting

Ingredients

Cake

  • 1 1/2 cups vegetable oil
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 1/2 to 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 3 cups chopped apples
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract

Penuche Frosting

  • 2 cups brown sugar (packed)
  • 1/2 cup solid shortening
  • 1/2 cup milk
  • 1/4 teaspoon salt

Instructions

Cake

  1. Bake for one hour in a tube pan at 325 degrees F.
  2. Frost after cooling completely.

Penuche Frosting

  1. Stir over low heat, then bring rapidly to a full boil. Boil for 1 minute at 220 degrees F.
  2. Remove from heat and beat to consistency for spreading.
