Fresh Apple Cake with Penuche Frosting
1 1/2 cups vegetable oil
1 teaspoon baking soda
1 teaspoon cinnamon
2 1/2 to 3 cups all-purpose flour
2 cups granulated sugar
3 cups chopped apples
1/2 teaspoon salt
2 teaspoons vanilla extract
2 cups brown sugar (packed)
1/2 cup solid shortening
1/2 cup milk
1/4 teaspoon salt
Cake: Bake for one hour in a tube pan at 325 degrees F.
Frost after cooling completely.
Penuche Frosting: Stir over low heat, then bring rapidly to a full boil. Boil for 1 minute at 220 degrees F.
Remove from heat and beat to consistency for spreading.
