Fresh Apple Cake with Penuche Frosting
Ingredients
Cake
- 1 1/2 cups vegetable oil
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 1/2 to 3 cups all-purpose flour
- 2 cups granulated sugar
- 3 cups chopped apples
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
Penuche Frosting
- 2 cups brown sugar (packed)
- 1/2 cup solid shortening
- 1/2 cup milk
- 1/4 teaspoon salt
Instructions
Cake
- Bake for one hour in a tube pan at 325 degrees F.
- Frost after cooling completely.
Penuche Frosting
- Stir over low heat, then bring rapidly to a full boil. Boil for 1 minute at 220 degrees F.
- Remove from heat and beat to consistency for spreading.
