Grilled Chicken with Garlic Butter

Yield: 3 servings


  • 1/2 cup (1 stick) butter, melted and cooled
  • 1/4 cup drained sun-dried tomatoes packed in oil
  • 3 cloves garlic
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon ground pepper
  • 2 3/4 pounds chicken breast halves


  1. Heat grill or broiler.
  2. Garlic Butter: In a blender, combine butter, sun-dried tomatoes, garlic, oregano and pepper and process, scraping sides occasionally, until blended.
  3. Chicken: Grill or broil chicken, turning occasionally and basting with Mediterranean butter, 30 minutes or until meat thermometer inserted in center registers 170 degrees F. Do not baste during the last 5 minutes of grilling.
