Tropical Bars in a Butter Coconut Crust

Ingredients

Crust

  • 1 cup coconut
  • 1 cup butter
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour

Filling

  • 3 limes, quartered
  • 2 1/4 cups granulated sugar
  • 4 eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon plus 1 teaspoon vanilla extract

Instructions

  1. Crust: Combine all ingredients and press onto bottom of 9-inch square pan.
  2. Bake for 15 minutes at 350 degrees F.
  3. Filling: Put all filling ingredients in the food processor and process until pureed.
  4. Pour over the baked crust and bake at 350 degrees F for 20-25 minutes.
  5. Cut only after cooling, then sprinkle with confectioners sugar and toasted coconut flakes.
