Fruit Kabobs with Pineapple Dip

Fresh fruit threaded on skewers and served with a fruity, creamy Fruit Kabobs with Pineapple Dip is simple, fun and tasty!

Fruit Kabobs with Pineapple Dip

Yield: 8 servings (2 kabobs and 1/8 of dip each)

Ingredients

Dip

  • 1/2 (8 ounce) package) reduced-fat cream cheese (Neufchâtel), softened
  • 1/2 cup plain fat-free yogurt
  • 1/4 cup honey
  • 1/2 (8 1/4 ounce) can sliced pineapple in juice, drained, finely chopped

Kabobs

  • 1/2 (8 1/4 ounce) can sliced pineapple in juice, drained
  • 16 seedless green grapes
  • 1/2 (11 ounce) can mandarin orange segments, drained
  • 8 strawberries, cut in half

Instructions

Dip

  1. In medium bowl, mix cream cheese, yogurt and honey until creamy.
  2. Fold in chopped pineapple.
  3. Cover; refrigerate at least 1 hour to blend flavors.

Kabobs

  1. Cut pineapple slices into eighths.
  2. Thread any combination of about 4 pieces fruit on each of 16 plastic or wooden skewers.
  3. Serve with dip.

Notes

Special Touch: For special events, serve a bowl of warm chocolate ice cream topping with the pineapple dip.

Time Saver: Skip the from-scratch dip. Instead, buy a tub of fruit dip. Or you can buy pineapple cream cheese and whip it to a soft consistency.
