Rhubarb Crisp
Ingredients
- 3/4 inch lengths rhubarb
- 2 cups granulated sugar, divided
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- Pinch salt
- 1 egg
Instructions
- Cut enough rhubarb to fill a 9-inch square glass baking dish 2/3 to 3/4 full.
- Sprinkle 1 cup sugar over the rhubarb and stir to mix.
- In a bowl mix remaining 1 cup sugar, flour, baking powder and salt.
- Slightly beat egg and mix into flour mixture with fork until crumbly.
- Sprinkle on top of rhubarb.
- Bake at 350 degrees F until done and lightly browned, about 30 to 40 minutes. Use wooden pick to test for doneness.
