Insalata Caprese

Ingredients

  • 3 large tomatoes, sliced
  • 1 (9 ounce) package Polly-O Fresh Mozzarella Cheese (6 balls), drained, sliced
  • 1/3 cup fresh basil
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon each: salt and freshly ground black pepper

Instructions

  1. Arrange tomatoes, cheese and basil alternately on platter.
  2. Beat oil and vinegar with wire whisk until well blended. Drizzle over tomatoes.
  3. Sprinkle with salt and pepper.
  4. Great Substitute: Substitute balsamic vinegar for the red wine vinegar.
