Stars and Stripes Forever Salad

Stars and Stripes Salad

Yield: 4 to 6 servings

Ingredients

  • 1 (10 ounce) bag fresh spinach, torn into bite size pieces
  • 1 cup chopped onions
  • 3 large sweet red peppers
  • 6 hard-cooked eggs, chopped
  • Prepared poppyseed dressing

Instructions

  1. In a large bowl, mix together spinach and onions.
  2. Place salad in a 13 x 9 inch glass dish or plastic container.
  3. Cut off tops and bottoms of peppers; remove seeds.
  4. Cut peppers in half with a horizontal cut, and remove membranes.
  5. Using a 2 inch or smaller star-shaped cookie cutter, cut 5 stars from each pepper.
  6. Place pepper stars in rows of 3 down and 5 across.
  7. Place eggs in rows between the stars.
  8. Serve with poppyseed dressing.
