Millet and Sweet White Rice Flour Waffles

Ingredients

Flour-Milk Mixture

  • 1 cup millet flour
  • 3/4 cup sweet white rice flour
  • 1 1/2 cups skim milk or milk substitute

Add-in

  • 2 eggs or 1 tablespoon egg replacer and 4 tablespoons warm water, well mixed
  • 2 tablespoons Gerber’s baby applesauce
  • 2 teaspoons aluminum free baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon

Instructions

  1. Mix millet flour, sweet white rice flour and milk. Refrigerate for 12 to 48 hours.
  2. When ready to make waffles add the add in ingredients.
  3. Stir well and pour 1/4 cup of batter per waffle square.
  4. Bake for 5 minutes in waffle iron.
