Wheat-Free Waffles

Ingredients

  • 3/4 cup water
  • 4 teaspoons vegetable oil
  • 1/2 cup Amaranth flour
  • 1/4 cup brown rice flour
  • 1/4 cup glutinous rice flour
  • 1/3 cup arrowroot powder
  • 4 teaspoons baking powder
  • 1/4 teaspoons salt
  • 1/4 cup granulated sugar

Instructions

  1. Heat waffle iron.
  2. Mix dry ingredients together. Mix wet ingredients together in separate bowl.
  3. Fold wet ingredients into dry, stirring minimally. A few lumps are alright. Pour onto hot waffle iron, covering well. Close cover and do not open until very little steam is coming out the sides.
  4. Serve hot with vegan margarine and maple syrup or your favorite topping.
