Grilled Garlic Shrimp

  • 2 pounds large, tail-on shrimp
  • 6-inch bamboo skewers, soaked in water
  • 1/4 cup butter
  • 3 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper
  • 2 tablespoons chopped fresh basil
  • Salt and pepper to taste


  1. Peel shrimp, leaving the tail on.
  2. Thread 4 shrimp onto each skewer; set aside.
  3. Melt butter in a small saucepan.
  4. Add garlic and red pepper.
  5. Simmer for 1 minute and stir in basil.
  6. Brush each skewer lightly with garlic butter, then season both sides with salt and pepper.
  7. Place on coals over medium heat and cook for 4 to 5 minutes per side or until very pink.
  8. Remove from grill and brush with remaining garlic butter.

Yield: 5 servings
