Grilled Chicken with Garlic Butter

Ingredients

Garlic Butter

  • 1/2 cup (1 stick) butter, melted and cooled
  • 1/4 cup drained sun-dried tomatoes packed in oil
  • 3 cloves garlic
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon ground pepper

Chicken

  • 2 3/4 pounds chicken breast halves

Instructions

  1. Heat grill or broiler.
  2. For Garlic Butter: In blender, combine butter, sun-dried tomatoes, garlic, oregano and pepper and process, scraping sides occasionally, until blended.
  3. Grill or broil chicken, turning occasionally and basting with Mediterranean butter, 30 minutes or until meat thermometer inserted in center registers 170 degrees F. Do not baste during the last 5 minutes of grilling.

Serves 3.
