Pineapple Chicken Rollups



  • 1/4 cup pineapple juice
  • 1/4 cup prepared mustard
  • 1 tablespoon brown sugar
  • 4 boneless, skinless chicken breast halves
  • 8 slices bacon


  1. Combine juice, mustard, and brown sugar, mixing well.
  2. Cut each chicken breast in half crosswise. Roll each piece up lengthwise; wrap with a slice of bacon, and secure with a wooden pick.
  3. Place chicken on grill over medium coals; baste with mustard mixture, and grill 25 minutes or until done, turning and basting frequently.

Yield: 4 servings
