Pineapple Chicken Rollups
- 1/4 cup pineapple juice
- 1/4 cup prepared mustard
- 1 tablespoon brown sugar
- 4 boneless, skinless chicken breast halves
- 8 slices bacon
- Combine juice, mustard, and brown sugar, mixing well.
- Cut each chicken breast in half crosswise. Roll each piece up lengthwise;
wrap with a slice of bacon, and secure with a wooden pick.
- Place chicken on grill over medium coals; baste with mustard mixture, and
grill 25 minutes or until done, turning and basting frequently.
