Grilling, Smoking and Barbecuing Recipes
Loaded Mexican Cheeseburgers
Yield: 6 servings
Ingredients
- 1 (15 ounce) can black beans, rinsed and drained
- 3/4 teaspoon ground cumin
- 1/2 teaspoon ground chipotle chile pepper
- 1 1/2 pounds ground beef (80% lean)
- 1/2 pound uncooked chorizo sausage
- Salt and pepper
- 6 ounces Widmer’s One Year Cheddar cheese, cut into 6 (1 ounce) slices)
- 6 ounces V&V Supremo Queso Chihuahua® Quesadilla cheese, cut into 6 (1 ounce) slices
- 1 cup refried beans, warmed
- 1 cup guacamole
- 6 whole wheat buns, split
- 1 1/2 cups pico de gallo, drained
Instructions
- Grease grill grate. Heat grill to medium.
- Combine the black beans, cumin and chipotle chile pepper in a large bowl. Crumble beef and chorizo over mixture; mix just until combined. Form into six patties, about 1/3 pound each. Season with salt and pepper.
- Grill burgers, covered, over medium heat for 5 to 8 minutes on each side or until a thermometer inserted into patties reads 160 degrees F.
- Top with Cheddar and queso quesadilla. Cover and cook for 1 to 3 minutes longer or until cheeses are melted.
- Spread refried beans and guacamole on bun bottoms; top with burgers and pico de gallo. Replace bun tops.
