Cucumber and Avocado Salad

Ingredients

  • 1 cucumber
  • Salt
  • Chile pepper
  • 1 tablespoon fresh lime juice
  • 1 teaspoon minced onion
  • 1 red bell pepper
  • Lettuce
  • 1 ripe avocado, sliced
  • Fresh parsley

Instructions

  1. Peel and slice the cucumber paper-thin.
  2. Season with salt, chile pepper and lime juice.
  3. Sprinkle with onion and red pepper slices.
  4. Arrange lettuce on 6 serving plates.
  5. Pile cucumber mixture in center of each plate.
  6. Add avocado slices and parsley.
