Brown Rice and Cheese Casserole

Ingredients

  • 2 1/2 cups brown rice, cooked
  • 3 scallions, chopped
  • 1 teaspoon dried dill
  • 1 cup low-fat cottage cheese or hoop cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup low-fat milk


Instructions

  1. Combine all ingredients in a mixing bowl.
  2. Pour into lightly oiled casserole.
  3. Bake at 350 degrees F for 15 to 20 minutes.
