Chewy Oatmeal Cookies
2 cups quick oats
1 cup brown sugar
1/2 cup vegetable oil
2 egg whites
1/4 teaspoon salt
1/2 teaspoon almond extract
1/2 cup dates, chopped fine, or raisins
1/2 cup nuts, chopped fine
Stir together oats, oil and sugar in large bowl. Beat egg whites until frothy. Add to oatmeal mixture.
Stir in salt and extract. Stir in dates or raisins and nuts.
Drop by teaspoonsful onto lightly greased baking sheets.
Bake for 15 minutes at 350 degrees F.
Cool for 1 minute before removing from baking sheet.
