Ultimate Low-Fat Pancakes



  • 3/4 cup plain low-fat yogurt
  • 1/2 cup low-fat cottage cheese
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 1/2 tablespoon baking soda
  • 1 tablespoon salt
  • Dash of vanilla extract


  1. Combine yogurt, cottage cheese and eggs in blender. Blend until smooth and creamy.
  2. Stir flour, baking soda and salt together. Add to yogurt mixture; blend only until mixed.
