Chicken Meatballs


  • 1 pound ground chicken breast
  • 1/2 cup whole-wheat bread crumbs
  • 2 teaspoons dried oregano
  • 2 tablespoons grated parmesan cheese
  • 1 egg
  • 1 teaspoon dried basil
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste


  1. Place all ingredients in a medium-size mixing bowl. Hand-knead mixture until evenly mixed. Make 1-inch balls from mixture.
  2. Using a large nonstick skillet, heat oil over high heat. Cook meatballs until all sides are browned, about 8 or 9 minutes.
  3. Remove with slotted spoon and place on a plate covered with paper towels.
  4. Add to your favorite spaghetti sauce and serve.
