Barbecued Pot Roast
Ingredients
- 1 (4 pound) beef roast
- 2 tablespoons fat
- Salt and pepper
- 1 (8 ounce) can tomato sauce
- 3 medium onions, sliced
- 2 cloves garlic, minced
- 2 tablespoons brown sugar
- 1/2 teaspoon dry mustard
- 1/4 cup lemon juice
- 1/4 cup vinegar
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- Dash of hot pepper sauce
Instructions
- Brown meat in fat. Sprinkle with salt and pepper.
- Add 1 cup water, tomato sauce, onion and garlic. Cover and simmer for 2 hours.
- Add remaining ingredients, cover and continue cooking 1 1/2 hours longer, or until tender, adding more water if necessary.
- Remove meat and skim off excess fat from gravy.
