Barbecued Pot Roast

Ingredients

  • 1 (4 pound) beef roast
  • 2 tablespoons fat
  • Salt and pepper
  • 1 (8 ounce) can tomato sauce
  • 3 medium onions, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon dry mustard
  • 1/4 cup lemon juice
  • 1/4 cup vinegar
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • Dash of hot pepper sauce

Instructions

  1. Brown meat in fat. Sprinkle with salt and pepper.
  2. Add 1 cup water, tomato sauce, onion and garlic. Cover and simmer for 2 hours.
  3. Add remaining ingredients, cover and continue cooking 1 1/2 hours longer, or until tender, adding more water if necessary.
  4. Remove meat and skim off excess fat from gravy.
