Smoky Chuck Roast

Yield: 4 to 6 servings

Ingredients

  • 1/4 cup water
  • 1 tablespoon liquid smoke (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon celery salt
  • 1 teaspoon onion salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon mustard seed
  • 1/4 teaspoon pepper
  • 1 (2 to 3 pound) boneless chuck roast
  • 1/4 cup barbecue sauce

Instructions

  1. In a large resealable plastic bag or shallow container, combine the first eight ingredients. Add roast. Seal bag or cover container; refrigerate for 8 hours.
  2. Drain and discard marinade.
  3. Place roast in greased 2 1/2 quart baking pan.
  4. Cover and bake at 325 degrees F for 1 1/2 to 2 hours.
  5. Baste with barbecue sauce.
  6. Bake, uncovered, for 10 to 20 minutes longer or until beef is fork-tender.
