Standing Rib Roast

Sometimes the recipes with the least ingredients are the best, and this Standing Rib Roast is one of them.

Standing Rib Roast

Yield: 10 to 12 servings

Ingredients

  • 8 pound Certified Angus Beef ® rib roast (3 to 4 ribs)
  • Salt and pepper to taste

Instructions

  1. Heat oven to 500 degrees F.
  2. Season roast generously with salt and pepper. Create a rack, by placing roast bone-side down in pan.
  3. Place beef in oven and roast for 15 minutes.
  4. Turn heat down to 325 degrees F and continue roasting for about 2 hours for medium (when thermometer placed in center of roast registers 140 degrees F before resting) or until desired doneness. Because roast sizes vary, figure 12 to 15 minutes of roasting time per pound after initial sear.
  5. Transfer roast to cutting board; loosely tent with foil and let stand for 15 to 20 minutes.
  6. Slice roast across the grain.
