V-8 Roast Beef
Ingredients
- Beef roast (eye-of-round, London broil, 7-bone, stew meat, etc.)
- 1 large can regular V-8
- 1 large bottle Kraft Honey BBQ Sauce
- 2 pounds baby carrots
- 6 large yellow onions, peeled and quartered
- 6 large peeled Russet potatoes, quartered
Instructions
- Heat oven to 300 degrees F.
- Place your choice of meat in a LARGE Dutch oven; pour in the V-8 and barbecue sauce. Add enough water to cover the meat.
- Cover and bake for 2 hours.
- At the beginning of hour number three: add the onions and carrots (if you like celery, add it now) and increase the heat to 325 degrees F.
- At the beginning of hour number four: add the potatoes and increase the heat to 350 degrees F.
Notes
Cooking the meat slowly makes it very tender. Save excess liquid to cook more vegetables or make gravy.
