Almond Oven-Fried Chicken
3 chicken breasts, boned, skinned and halved
1 cup all-purpose flour
1/4 teaspoon pepper
2 teaspoons paprika
2 eggs, beaten
3 tablespoons milk
1 1/2 cups almonds, blanched, finely chopped
2 tablespoons fat
- Heat oven to 400 degrees F.
- Coat chicken with dry ingredients. Dip in mixture of beaten eggs and milk.
Roll in almonds. Let stand for 10 minutes.
- Melt butter and fat in shallow baking pan. Place chicken, skin side down,
in pan. Bake for 30 minutes.
- Turn; bake until tender, about 30 minutes.
