Apricot Chicken

Recipe Ingredients

  • 6 pounds boneless, skinless chicken breasts
  • 1 cup apricot jam
  • 1 cup orange juice
  • 3 medium onions, sautéed in 2 tablespoon butter

Method

  1. Place breasts in a baking dish.
  2. Mix together jam, bourbon and onions. Pour mixture over breasts.
  3. Bake at 350 degrees F for 35 minutes.

Serves 12.
