Kiwi Sauced Chicken



  • 2 pounds chicken parts
  • Unseasoned bread crumbs
  • 1 cup chicken stock
  • 1/4 cup lime juice
  • 1/3 cup dark brown sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ginger
  • 1 clove garlic, chopped
  • 2 kiwi fruit, pared, sliced and quartered

  1. Coat chicken in crumbs.
  2. Bake in shallow greased baking pan at 375 degrees F for 50 minutes to 1 hour.
  3. Combine stock, juice, sugar, cornstarch, ginger and garlic in saucepan. Cook, stirring constantly, until thickened, about 5 minutes.
  4. Remove from heat. Add kiwi. Pat amount desired over chicken before serving.

Yield: 4 to 6 servings
