Kiwi Sauced Chicken
- 2 pounds chicken parts
- Unseasoned bread crumbs
- 1 cup chicken stock
- 1/4 cup lime juice
- 1/3 cup dark brown sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon ginger
- 1 clove garlic, chopped
- 2 kiwi fruit, pared, sliced and quartered

- Coat chicken in crumbs.
- Bake in shallow greased baking pan at 375 degrees F for 50 minutes to 1
- Combine stock, juice, sugar, cornstarch, ginger and garlic in saucepan.
Cook, stirring constantly, until thickened, about 5 minutes.
- Remove from heat. Add kiwi. Pat amount desired over chicken before serving.
