Lone Star Chicken



  • 1 (18 1/4 ounce) can diced tomatoes
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons dried oregano, crumbled
  • 2 tablespoons wine vinegar
  • Salt and pepper to taste
  • 1 (2 1/2 to 3 pound) chicken, cut into 8 pieces

  1. Place tomatoes and juice in a large sauce pan.
  2. Add onion, garlic, bay leaves, cumin, oregano and vinegar and stir to blend.
  3. Add salt and pepper.
  4. Simmer sauce on top of the stove, stirring occasionally, for 30 minutes.
  5. Place sauce in an oven-safe covered casserole.
  6. Heat oven to 350 degrees F.
  7. Add chicken parts to casserole, pushing them down into the sauce.
  8. Cover and bake for about 1 hour.

Yield: 4 servings
