Chicken with Rice Stuffing

Chicken with Rice Stuffing recipe

Yield: 5 servings

Ingredients

  • Salt and pepper
  • 1 tablespoon butter
  • 1/2 onion, chopped
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1/2 teaspoon thyme
  • Pepper, to taste
  • Whole chicken

Instructions

  1. Season inside of chicken with salt and pepper.
  2. Melt butter. Add onions and saute until lightly browned.
  3. Add rice; stir over medium heat until browned.
  4. Add chicken broth. Stir and cover. Cook until liquid is absorbed.
  5. Add thyme and pepper to taste.
  6. Let rice mixture cool and then stuff chicken.
  7. Bake chicken at 350 degrees F for 1 to 1 1/2 hours. Baste frequently with pan drippings.
