Chicken with Rice Stuffing
Yield: 5 servings
Ingredients
- Salt and pepper
- 1 tablespoon butter
- 1/2 onion, chopped
- 1 cup uncooked rice
- 2 cups chicken broth
- 1/2 teaspoon thyme
- Pepper, to taste
- Whole chicken
Instructions
- Season inside of chicken with salt and pepper.
- Melt butter. Add onions and saute until lightly browned.
- Add rice; stir over medium heat until browned.
- Add chicken broth. Stir and cover. Cook until liquid is absorbed.
- Add thyme and pepper to taste.
- Let rice mixture cool and then stuff chicken.
- Bake chicken at 350 degrees F for 1 to 1 1/2 hours. Baste frequently with pan drippings.
