Orange Chicken



  • 2 cups diced celery
  • 1 1/3 cups water
  • 7 cups crumbled day old whole wheat bread
  • 1 teaspoon salt
  • 6 tablespoons chopped onion
  • 1 cup margarine
  • 8 half chicken breasts, de-boned

Orange Wine Sauce

  • 2/3 cup granulated sugar
  • 3 tablespoons flour
  • 2 eggs, beaten
  • 3 cups orange juice
  • 1/2 cup white wine


  1. Simmer celery in water 20 minutes.
  2. Drain, reserving 2/3 cup liquid.
  3. In a large bowl combine bread crumbs, celery, celery liquid and salt.
  4. Cook onion in margarine until tender.
  5. Add to bread mixture.
  6. In a baking pan make 8 mounds of dressing.
  7. Place an uncooked chicken breast over each mound.
  8. Pour Orange Wine Sauce over chicken and mounds of stuffing.
  9. Bake at 350 degrees F for 1 1/2 hours.
  10. Orange Wine Sauce: Mix sugar and flour in double boiler; add eggs, orange juice and wine.
  11. Cook, stirring constantly, until thickened.

Yield: 8 servings
